I have just returned from India and love the food I had.(We weren at a homestay in New Delhi) I want to learn how to cook more Indian dishes and you have made this possible. I purchased some gram flour and my son found this video for me 'cause I love zucchini. Can't wait to make it and then watch some more videos. Again a warm thank you from my 65 year old heart that is still loving to learn new recipes.

    Re "Yogurt is to cool down the spices in whatever you add".

    According to Ayurveda - the ancient system of Indian healthcare, its not good to eat yoghurt as it makes the body acid and sour. Instead Ayurveda recommends adding the yoghurt to a glass of water to make tasty lassi. Its much better for you..

    Neither should milk be drunk with vegetables, fruit or salty dishes.

  • My roommate made these in college, but I think he used wheat flour. They were delicious, and he used serranos which were good and spicy.

    Do you ever make a batch of these and keep them warm for 10-15 minutes to serve them alongside something else? I'm thinking of using these instead of a tortilla for fish tacos with some fresh salsa on top.

  • mmmm!! had this for lunch today AND yesterday, right after watching. I made a version from an Indian cookbook before, but it wasn't as good. The rice flour you add lightens the dosa up nice - it was too heavy with just besan. Also I just used veggies I had in the house and it was delicious both times - yesterday; fine shredded cabbage, grated carrot, chopped parsley.Today grated carrot, finely chopped celery, celery leaf and brocolli. With yogurt & mango chutney - FANTASTIC quick brunch!

  • DONE! :) we eat them with cheese and tomatoes! de-li-cious!

    The only thing had to take care of was to make the pudas thin enough - if thicker, they got burned on the outside until I waited them to get ready in the middle. (they had to be rather french-crepes-style then northamerican-pancake-style).

  • I enjoyed 'discovering' you so very much yesterday and today I made two of your recipes! (See comments under Cilantro Chutney). The Besan Puda was a big hit. Delicious. The one thing that surprized me was that I only had 2 Pudas with the tomato (1/2 a small one) a few cucumber slices (my addition), the Cilantro Chutney and some (Greek Style) yoghurt and it was very satisfying.

  • Manjula you're just awesome! I was always afraid of making this pancake, thinking it was an intricate dish, but you make it so easy and helped me think of varieties for stuffings. Hmmm yummy!!!! You're the best! Like a mama's cooking!

  • It looks great, but I'm new to Indian food. What do you do with the yogurt? As a dip for the bread? So that you take it and dip once in the chutney and again in the yogurt?

  • The yogurt is to cool down the spices in whatever you add. As you saw she has green chiles. For any hot food, adding yogurt or any dairy product or milk, it'll cool your mouth down.

    Next time you eat Indian, Mexican or any of those hot cuisines, instead of chugging down water when your eyes are about to pop out, how about drinking a bit of milk or taking a dab of yogurt? :-D

  • I have realized my mistake after finding the meaning of "besan." I did not realize the recipe needed chickpea flour. I thought it was calling for udad (black gram) flour, since that is traditionally used to make dosas. Please, you should clarify this. Thank you.

  • besan is garbanzo bean flour not chickpea flour

  • garbanzos and chickpeas are the same thing

  • Something went wrong when I made it. 3/4 cup of water was not nearly enough. It was far too thick. I had to put at least 2 cups of water to get it to the right thickness. Also, the flour quickly got very lumpy when I added the water, which made it very difficult to mix. It did not get lumpy in the video. Can you please explain? I followed the directions exactly. I used 3/4 cup udad (black gram) flour and 1/4 cup rice flour. After cooking, it was browned but too moist in the middle.

  • This recipe use Basen you will find basen in any indian grocery store.

  • basen puda is mostly for breakfast but can be serve any time as light meal. the sause is hari chutney or cilantri chutny I have the recipe for that and yogurt is always good.
