The reason why the old fan got damaged is because of the simmer switch.
It may damage a motor. Are you sure this is a right king of fan for variable speed control?

If you're going to wire a ceiling fan so as for the light and fan to be controlled by a wall switch, you really should use a regular switch. You can always control the fan and light settings via the pull chains.
