1. Look for firmness, deep red with iridescence of colors in the light and smell of the sea for fresh tuna. (ask your fish guy but don't trust him was no help!)
2. Ahi and Yellow Fin are the same thing guys
3. Don't ever salamander or oven cook after pan searing your tuna steak!
