I think why they did not add Elmyra was because of Pinky, Elmyra, and the Brain (a spin off of Pinky and the Brain, look Pinky, Elmyra, and the Brain up here!)

If they had an Elmyra track, it would be set in Elmyra's home, and she would say "OOOHH! LOOKIT THE FUZZY HEADS! I'm gonna love you, and hug you, and squeeze you into itty bitty pieces!", and then they escape with Pinky and the Brain.
