  • @theSiinaa Coffee cake when it was first created gave people Sugar rushes or kept them awake for long periods of time. It was first called Caffeine cake but then in later years the use of sugar was shortened and it was just called crumb cake. if I remember correctly in the early or late 70s the crumb cake was enjoyed with coffee so hence it has its nake coffee cake because you were to enjoy it with coffee dunk and such

  • 5:33 Whenever your whisking any mixture that uses flower you can only whisk clockwise or ant-clockwise, because you want to align the gluten strands to make the end product fluffy. If you keep alternating it your gonna mess up the strands making the cake soggy and compacted. ;)

  • Jack, you're hilarious... and that was a cool video, but man would it kill you to pick up some rubber spatulas, and some high sided plastic bowls. I concur about the Country Crock, that stuff is just oil.

    i think their cinnamon ribbon was higher, cause they just spooned in mounds of the batter for the bottom. Then they added the cinnamon sugar, and didn't pat it down. Just a theory... Gonna go check out your other vids... stay frosty bruddah!

  • I honestly have never tried a Todd Wilbur recipe that isn't at least 90% close to the original. I too hate Miracle Whip but I've made it for someone (just because I'm a geek and wanted to go through his whole book) and they said it tasted right on. You did a great job with all three of your videos. The error on the Miracle Whip was just lack of instruction on Todd's part. But the man knows his stuff.. Homemade Big Mac's all day long! hehe His snapple and Arizona Iced teas are great and east too!

  • You know what funny? not a single drop of coffee, wonders why they call it "coffee cake" so any cake we have with coffee is named coffee cake.

  • Hi, I love your videos and hope you're feeling well. I know you were following Todd's recipe but just wanted to make a suggestion about the cake base. If you use all white sugar and no brown sugar the cake part will taste more like starbucks. Using brown sugar will make the batter darker and give it more of a caramel taste. Also, I would love to read your FB page but it says "if you know Jack" so I feel weird doing that. Again--great videos!

  • I think if you use cake flour and king arthur cinamon filling I bet it would have a better consistancy.

  • Yeah i know about the soddy directions, but i guess it would be a little lighter in color if you whisk a bit more and maybe add one more eggwhite... Then again, in different parts the egg sizes and whatnot can vary quite a bit, so if the taste is very close it truly is amazing that he replicated all these recipes. Great experiment!

  • I've loved the Starbucks classic coffee cake ever since I first tried it in New York 3 years ago, but unfortunately, I can never find it in Montreal. So whenever I crave it, I usually make a similar one myself, using a recipe by martha's stewart (which is pretty good I must say, but doesn't have the cinnamon swirl in the middle). Next time I'll try this recipe if I happen to have any buttermilk around

    all you have to do is make toast then smear butter on it. then add both pumpkin spice and sugar together and sprinkle it on the buttery bread.

    It's insanly easy!

  • @jakatak69 Hey matey i am 17 never really thought of cooking that much didnt really want to do it ect... I do eat alot i am not big i have to eat alot to burn it all off whilst doing sport ect...

    I have seen every single vid in 1 day now i like them all think you have changed me i want to get home form college and cook an omlette or Juicy burger with homegrown mint and brunt onions on the BBQ even though its not summer :) lol Soft bread though soooooo nice dad makes them the best :)

  • @BASTEH99 the tub of butter I always buy is Country Crock Spread. it's not real butter. You are correct. I buy the one with calcium added to it. :D

  • i tried to do this it really wasnt that hard for me to do it but instead of puttign the cinnamon in b4 it cooks i just put it on top after it came out of the oven and i found it to work alot better and to make it alot easier for me :)

    btw love your vids but a suggestin you should try to make a blooper episode that would b amazing!!

  • Don't get ripped off by buying Todd Wilbur's books. These recipes are free all over the Internet on sites like copykat*com (remove asterisk and replace with .) and cdkitchen*com (remove asterisk and replace with . ). You can also get his cookbooks half price on Ebay.

  • Okay I actually just made this coffee cake and it was a success I must say, I had to improvise a little on some ingredients but its edible haha so those of you wondering about this recipe, I recommend it =)

  • I made the Big Mac from his book. It turned out not only better than the actual Big Mac, but healthier, cheaper, and more filling too. It was probably because I changed the sauce, though. Instead of French dressing in the sauce I used Ketchup. The only French dressing I had was expired and fat free :P.

  • hi jake! love this idea of recreating your favourite foods from manufactured products and of course yours will have to be better because you are using natural, fresher ingredients without chemicals. yeah, love it! will you please try to make mallow teacakes. let me describe: a shortcake/bread base, a layer of jam raspberry/strawberry, then a scoop of mallow on top, all covered by a layer of chocolate coating. naughty but nice. fabulous

  • I tried this recipe twice, it tasted delicious. but one problem i faced was that the topping turned out very soft and almost formed into a dough-like texture instead of a fine bread crumb-like texture. What am i doing wrong? i really want to get the topping right..

  • @vivianchaoxx not sure what to say. Try not to work it so hard. use a soften butter and lightly work it into the dry ingredients.

  • @Jebidisa yes. Mayo IS an emulsion, but this vide ISN'T ABOUT MAYO. It's about a completely different product called Miracle Whip.

  • Jack, I'm loving your videos.

    I'm writing because I noticed you "buttered" the pan with Country Crock in this video. That'll work with a brand new non-stick pan, but your viewers should use real margarine, butter, or shortening if the pan isn't brand new and non-stick. Country Crock contains ingredients that can actually make things stick.

    By the way, one of the secrets of Starbucks baking is that they use English cinnamon instead of American cassia cinnamon. Penzeys has it.

  • Advice for the topping. When mixing butter with just about anything, DONT use your hands. It melts the butter. Use a pastry cutter. That way the butter stays cold.

    If the butter is supposed to melt, then disregard this suggestion ;)

  • I had it on the stove to get soft while preheating the oven. It was partially softened butter. I just helped it along. :D

  • One of two things is being assumed by those instructions Jack.

    1: That you're using a mixer with a whisk attachment.

    or

    2: You know that you need to add air, and thus you are whisking very quickly.

    But either way, I'd say give that one another shot. Or, since you don't like is (I don't either) try a 4th test maybe. Just for fun!
