I love leeks--but as many times as I've made this, I've never used leek--I always have soooo many green onions in the fridge, I can barely stay ahead of them--I'm definitely gonna have to get control of my life back from the green onions.

well...you've got half a pancake, so it's not a total loss--it's a filling dish, and half will probably be enough. To build confidence and forearm strength, I recommend Mr. Miyagi's wax-on-wax-off technique. If after shining the car up you still have problems with the flip, you'll probably wanna just go ahead and invest in a big spatula (it'll open up a wonderful world of omlets, too)

I did make this w/fresh frozen sockeye salmon(cause thats what I had)and it turned out great! I will make it again! I'm a squid fan...it has a distinctive texture and the tentacles can add a flair of exotica to any dish...flavor-wise it's pretty nondescript, but it's a fun way to add protein to a salad--and it's funny you should mention canned squid, I had my first brush with canned squid yesterday, and actually shot a video--I don't know if it'll ever make it's way out of the editing program, but maybe.
the structurally unstable part is true, too--at least for me--if I use too much seafood and the pieces are too large, the pancake loses the will to remain intact during the critical flipping phase (or "turning" phase if you're not into flipping).

Regarding seafood -- I recently discovered the new/current version of Mrs. Paul's Fish Sticks. If you haven't tried these within the past year or so -- it's arguably among the best breaded anything I've ever tasted. Five stars from the DREWnetwork -- very highly recommended.

actually, the seafood cooks easily (espcially since it's chopped) and care should be taken not to overcook; the batter is thin and should be spread evenly. 4-5 minutes cooking on one side and then turning the cake and cooking for approx. 2 more minutes is plenty of time. The cake should be golden and somewhat crispy. It's a great recipe for seafood, but definitely would not work with raw chicken, pork, or beef.
it's easy and addictive. I keep a bag of frozen assorted seafood in the freezer and thaw out portions as needed. At my market (Publix), they have something called SEAFOOD MEDLEY in the freezer section; It's an assortment of calamari, mussels, octopus, and shrimp and was $5 for a 1 pound bag when I last purchased it.
If you flip with confidence, you may end up with it on your shoes, but if you flip without confidence, you will certainly end up with it on your shoes. There is no option but confidence even if it may be false confidence.
