Because Fate/Stay Night, as a both as a story and as a visual novel is superior to Tsukihime.

I know that F/SN is more original, but it's more "pussy", it's not as tragic or hardcore as Tsukihime, it has less routes, but it has more effects, but I'm not a superficial person and I prefer the story. I love F/SN too, but Tsukihime is really, really superior. Just my opinion

@diegoseba12 Personally , I feel that Tsukihime is more tragic / emotional as compared to F/SN - but I also feel that F/SN is more epic as compared to Tsukihime.

If F/SN is a violent typhoon which sweeps the audience off their feet - Tsukihime will be the gentle trickle of tears under the moonlight.

Nope, this one is from the original Tsukihime. The piano only version you mentioned is from the Kagetsu Tohya album, which is like a fun disc game of Tsukihime. But yeah, they're both great, you can tell that the main melody(the piano) is different.
