Because, in high speed steerings vehicle's weight center is moving to outer side of vehicle. So outer side will more heavy and If the diffs are open, outer side wheels can keeping them speed normal. But If diffs are locked, outer wheels going to spinning and driver lose control over the vehicle.
@TheGoodorevil you are correct, it is because when you turn, the outer tires have to cover a greater distance than the inner tires. this will cause the inner tires to spin (there is more grip on the outer tires), and you will lose control and spin. the locked diff will also be able to get you unstuck while off roading, especially if some of the tires are off the ground.

The axis with the little bevel gear comes from the engine...this engine has only one rotating shaft...but you need two (one left wheel, one right wheel)...and you need they can turn at different speeds so you can turn in a curve without drifting...with this mechanism (differential---the four bevel gears linked among themselves) you can, in a curve, "borrow" speed and torque from one semi-axis to another...
...remember, in a curve, inner wheel has to "travel" less distance than the outer wheel...so we need that inner wheel turns slower than outer wheel...
