Presumably, the footage was edited to remove those who did detect the difference. This is a pretty ambitious test, after all, especially with some of the subjects, so the rate of failure was probably higher than most change blindness experiments, which usually are at least 75% successful.

Change blindness happens because the enormous amount of sensory data that you take in every moment is constantly filtered and edited so that you retain only what your brain considers relevant.

If you think about it, these people don't look at his face, they don't have any reason to. He catches someone walking by (more focused on what they're doing rather than looking around or thinking), asks them a question, and quickly flashes the map in their faces, so even if they do catch a glance, they really don't have time to process it. I can't really explain the Asian girl or black guy switches, but yeah.

There was a similar experiment where two men who looked alike switched, like the beginning of the video, and it said that roughly 75% of people didn't notice. I don't have statistics to back me up, but I'm guessing the percentage isn't nearly as high for when they switched gender and race.
