You mean the melody? I played the melody on a separate track after recording the chords. The keyboard is able to record separate tracks one by one.

That's a good question! :) Yes, I use the paddle whenever necessary to sustain the sound. I think I let go of it roughly at every change of chord, and step on it again at the beginning of the next chord.
