    You can parboil them, but it's not necessary. If you follow this recipe, they turn out great! =]

  • I followed the recipe exactly. I liked the taste, but the potatoes were as hard as rocks.While cutting into one, one potato piece went flying off the plate at hyperwarp speed, hitting one of my cats on his head. He was a little shell shocked for a few minutes. Should the potatoes be boiled any before going into this recipe?

  • Mmmmm.....!!! They have to be the best looking roasties I've ever seen. I noticed you didn't remove peel. Does it get a bit tough or not? Really want to make these but my 8yr old hates the peel. I love it though.

  • @TSHOiiY ....if you are not a fan of thyme...try rosemary...I also like to add some dried basil...just a bit ...and fresh parsley.., the trick with these herbs is to use just enough. Just stay away from oregano. (JoseBonilla) (NY)

    I like to turn them to help with even cooking. If you have a convection oven, then it's not much of an issue.

    The potatoes should have a little crisp texture to them and should be soft in the middle like a baked potato. Did you have your oven at the right temp?

  • @ChefTips i had it 375. It was crisp but its tasted more like a bunch of small baked potatoes not like the roasted potatoes i have in the diners. I dont know why, i can never get roasted potatoes the way i like.

    The difference could be the seasoning and you mention diners.

    Are you talking about "home-fries"? If so, these are made by using left over baked potatoes. These are cooled and diced the next day and are sauteed with seasonings.

  • @ChefTips no not homefries, i know what homefries are that we eat for breakfast even though u could have roasted potatoes for breakfast as well. Maybe the seasonings but i think its more the softness on the inside. The ones i made are a little tougher and puffy on the inside. How do i get it where you can slice right through them soft?

  • Right i can't cook for diddly !!! but as we speak I'm attempting a Roat chicken and the Roast potatoes the way you just showed us above ...doing this with a salad which is kinda easy even for me ..this will either be a complete disaster or the mrs is going to impressed ...watch this space !!

    Olive oil does not have a high smoking-point. It usually is not used for deep frying, but It is great for sauteing and coating food that is roasted in the oven.

  • @sgtcarlos91 As long as you work hard and volunteer with some cutting-edge (and traditional) restaurants, you'll learn the skills you need. Le Cordon Bleu is a fine school. Good luck!

  • Drain, put lid on and shake around the pan, to roughen the edges up ( this will allow to crisp better. Only then, my friend, put them in the oven for about 40 minutes, seasoned with mint ans black pepper. Try it buddy!

  • Hi Chef; I have watched a lot of your videos and got some great tips, cheers. However, when it comes to Roast Potaoes, there's nothing better than the conventional Yorkshire ( UK ) method. Try using bigger potatoes ( Maris Piper ), half and boil in salted water, with a knob of butter for around 8 minutes.

    The only place to have Potatoes was in Polynesia... (the tiny islands North East of Australia).

    Scholars arent sure how potatoes got there... logic would say ... people on boats!!!! DUH!

  • try roasting potatoes with duck fat and rosemary and garlic and put a little bit of plain flour , they come out really cripsy but soft on the inside. really makes a difference.

    Duck fat is also great for frying your french fries! If you have ever had late night fries at Thomas Keller's Bouchon in Yountville Ca, you know what I mean!

  • Hard to beat a roasted potato. When I only have big potatoes, I slice them in large wedges and throw them on a sheet pan. Everything else pretty much identical to this recipe.

    Do you have to boil the potatoes first or can you roast them as shown from raw?

  • Good question. You can par boil the potatoes if you want, but it is not necessary. If you do, do not boil them too long or the colorful skin will begin to come off.

  • Chef, don't u think that it will be easier to eat and cook if you peal the potatoes???

  • For a different presentation, you can peel the center of the potatoes and cook them whole. I like to leave some peel on for color.

  • I've tried making these so many times but I place them on a coated cookie sheet. The problem I have is I can't turn them over since stick, causing them to brown only on one side. I don't have a cast iron pan to use like your video showed. Any suggestions?

  • Hi. In the restaurants/hotels we would roast on a sheet pan lined with parchment paper. The spuds will not stick. Also, try a glass or ceramic casserole dish.

  • Does not covering the potatos with foil or cook ware top cause the potatos to dry out?

  • Hi there. The potatoes get a little crisp on the outside, and the inside is like eating a baked potato. If you over cook these the will dry out. Hope that helps. Thanks for question!

  • I will try these, the best roast potatoes are crunchy on the outside and fluffy on the inside. When you mix them it would be better to use your hands rather than the spatula thing, more of the potatoes get covered with the herbs that way.

  • If you boil the potatoes first, just for 10mins, then shake them in the pot, the outside will go fluffy, which in turn will make your potatoes even crispier in the oven!

  • Hi GooGoowa! If you are going to use butter for this, I would recommend using clarified butter. Check out my video "clarified butter" to do this.

  • Great vid. I make this dish all the time for my friends and family. Unbelievably easy, super delicious, goes with nearly anything, and guest are always impressed.

  • Years ago before I got into the food business, my wife and made a similar recipe for a family Thanksgiving dinner. We used red potatoes and rosemary instead of thyme. Everyone LOVED them! It's a great way to do potatoes.
