You should soak the smoking chips in water about an hour before you grill. This is slow the smoking and stops the chips from simply catching fire quickly.
Very good video, only thing I would change is that I would soak the wood chips in water about 30mins prior to throwing them on the coals. I saw when you went back to the grill after adding the wood that the wood was actually burning already. Soaking them in water will stop this and will actually give a lot longer lasting smoke.
Other than that, this video was very informative. :)
nice video. I like the idea of using the whiskey wood chips, I will have to try that. Please consider doing a part 2 on this video and doing a chicken breast video, as have severe complications on cooking boneless chicken breast over coals. keep up the awesome videos!
