I wouldn't be a saiyan regardless, but it's just a continuity issue. Granted, the whole DBZ series is loaded with continuity issues, but still. Plus, who says the saiyan genes can't be spread through Goku's and Vegeta's bloodlines if it's that many years in the future?

Plus, couldn't Capsule Corp or some other oddball regime (could be made for the game) manipulate the saiyan genes somehow to replicate/disperse it into the human genome?
