The reason Alphonse pants, and talks and all that other stuff is because his soul is still linked to his body. His body in turn is linked to Ed, who eats and sleeps for both of them. The reason they're linked like that is because when their bodies were broken down after they tried to bring their mom back, their elements and bodies got all mixed up. So that's the reason Al pants when he walks :D
