Are variable pitch copters harder to fly? or is it just the setting up and trim that puts them out of reach of the novice?

Why does it have 2 main rotors and a tail rotor? Co-axial helicopters should not need a 3rd rotor, that's the whole point in having co-axial

The tail rotor is probably just spinning in the breeze form the main rotors. You are right a co-axial does not need a tail rotor. They just put it on for looks. Let me know if you have more questions.
