  • where is everybody....? hello..? I fell asleep as the dosai cooked. Why in God's name does it take so long? I make masala dosai every week. Should'nt have to cook for this long what kind of stove may I ask? And the music? Please....

  • @malihaipoo the time it takes to make a dosa depends on the dilution of the batter, ( in this case, the batter is diluted to enable it to spread itself around the griddle as shown )  the size of the the dosa ( in this case 14 inches in dia ) being made, the type of griddle ( aluminium, iron, or teflon coated ) apart from the kind of stove being used. A lot of people have serious problems spreading the batter uniformly on the griddle, and this method is a way out for them .. music .. sorry !

  • dosa is a kind of what is known in other parts of the world as a crepe. it is made by pouring ( as shown in the video ) a fermented batter composed of one part of black gram and about 3 parts of rice, soaked sufficiently and ground into a fine batter. this batter is left to ferment overnight at about 40degreees celcius. the resulting batter is poured over a hot griddle lubricated with cooking oil. It cooks into a crepe of about 5 mm thickness. it is a delicacy in south india. do try it ! :-)

    Your dosa movie should win Oscar in the "short films" category. It is full of suspense and the crackling sound of the dosa adds something. Do not change a thing. I sometimes make my Dosa like this - slowly. But I don't play the same music - what is that piece? Still absolutely fascinating and thank you for your timeless and sublime contribution to the fine art of making Dosa.

  • How do you season your skillet? Your dosa releases from the pan so nicely. I noticed another dosa video posted in which the maker rubbed the skillet with an onion before cooking...

  • if the skillet is a well maintained non stick ware, you don't need to season the skillet ( in my case the skillet was almost new ) ..however, if you are using an iron uncoated skillet, then for the first dosa, you need to coat it with oil when the skillet is hot, you can use onion, potato, brinjal or any other vegetable to spread a spoonful of oil ...hope this clarifies, cheers ! :-)

  • in general the lesser the rice flour you use, the softer the dosa would be. but using anything lesser than 3 of rice flour to 1 of urad might result in a very sticky dosa that would be difficult to get off the skillet..also you need to cover the skillet with a lid while the dosa is cooking if you want very soft dosas.i once used a deep non stick saucepan with a lid to make the dosas and they came out really soft and fluffy.. also dont mix the batter too much after fermentation .. cheers ! :-)

  • sorry, you got all your information wrong ! dosas are not always crisp, and many people like dosas very soft also, and in fact in homes this is the way it is preferred, and in hotels they serve you with crisp dosas, and will also serve you soft dosas if you request them,, and making dosa soft or crispy is a choice ... i really wish i had the guts to comment like you without knowing anything ! :(

  • sorry about the music, i realise maybe i over did it ...and dosa has two important things to be taken care of - the making of the batter and the making of the dosa. i have myself been trying out different batters and also making them on different types of griddles; do share with me your findings, would love to know ! thanks for commenting, really appreciate it :)

  • terribly sorry ... i have probably reacted more with suspicion than with rational thought to your comments... you see i did receive some racist and hate comments on some of my videos that made me very disturbed and am rather jumpy at times .. sorry again ! and cheers !

  • Yes I am aware the dish is called dosa. Dosa is a pancake. I make these myself and love Indian food.

    Anyway I apologize if I caused offence. I'm just honest with my responses.

  • i wish i had your ability to make pungent remarks ! i dont .. yes.. this happened to be my first video on cookery.. and at that time had not yet learnt how to edit the movie clip suitably .. and didn't think someone would be looking to be excited by watching a cookery video ! incidentally the name of the dish is dosa .. not pancake

  • you just have to dilute the batter sufficiently so that the one cup you pour into the griddle will spread by itself around, and also the griddle should not be just warm and not fully heated.. then when you pour the batter onto the griddle it will spread uniformly and perfectly round.. you then place it on the heat and increase the heat to complete the cooking.. am almost sure that you may have not diluted the batter sufficiently .. try again .. am sure you will succeed

  • you have probably not diluted the batter sufficiently ..you need to dilute it so that when you pour it into the griddle it will automatically spread by flowing around the griddle on its own.. you also have to take the griddle off the heat while you pour the batter .. and after you have got the batter spread uniformly on the griddle replace it on the stove .. try this and let me know ..
