I've probably eaten about a million gallons of this in my life. Nothing is better than beer and chile con queso. Had never occurred to me to put cilantro in it. Will try next time.

You can melt butter (1-2 Tbsp) in a heavy bottom pan and add equal part of all-purpose flour. Let is cook until light pink in color. Add a little milk or sour cream. Whisk so there are no lumps. Add shredded cheese (cheddar works great) and allow it to melt.
I don't have it where I live, but I think you could use every cheese that melts creamy, like (I don't know if it's in denmark) but these little cubes of soft cheese, (la vache qui rit) or something of that kind (or zizi or some melting cheese)
you girls should try out for Food Network. they really need an Indian cooking show on there. if you haven't considered it already, its just an idea :) you girls are great, the crock pot is super-cute!
ah come on ladies. i love most of your recipes, but sheesh you live in texas! your dip shouldn't use processed cheese food!! i know cheese gets oily, but it's all about the roux. both of you are talented enough to make queso the right way :)

Cheese splitting and becoming oily is not a problem with the cheese its a problem with the person cooking it.

Queso did not originate in Spain! It originated in Texas as a tex-mex version of Queso Chihuahua and Queso Flameado from Northern Mexico.

Any salsa would work. Basically, you need something that has tomatoes and chilies.
