Very nice. I like to use russet potatoes and waxy potatoes in my potato leek soup. The russets will cook down to a creamy texture while the waxy potatoes will hold their shape and give the soup a bit of texture. Your recipe is a very tasty one that is so good on a winter evening!

hey, a quick question. i have always thought spring onion would be a good alternative to leek. but they always end up burnt in seconds. so the proper alternative is just the onion, as in the bulb? tq

when I make this, I always finish with a tub of half fat cream.... it takes the hole thing to a completely different level. I always make this in the summer. Keep it in the fridge and serve it cold, on a hot summer day with a few slices of baguette.... delicious classic Vichyssoise... or white gazpacho...
I do love this recipe but I like to blend a tiny bit of Stilton cheese in to it for that rich, mature taste. Not everyone will like it but I think its great.
