And yes berkulese, they're totally NOT medieval. Post-Renaissance. Medieval would be before about the fourteenth century. I think Wedgewood dates back to the 17th. (Early to mid 1600's.) That's not even the Renaissance anymore.
The old chef (Michiba) retired. Then Nakamura took over for a short while but didn't last long because his win/loss ratio wasn't too impressive. The next replacement is the guy in white you see here - Morimoto.
The Italian dude appears when specially requested because of his junior status.

I've seen about half the iron chef episodes so far, and with the exception of the weird dubs on this episode its my favorite so far. SO EPIC!

It's one of the few episodes where they did dub him.
They generally weren't very popular. Most people prefer the subtitles for him.

Sakai was the best. he's no longer an everyday chef, he's semi retired as of the middle of 2010. Heard he's teaching folks now.
