I´ve just watched this marvellous movie again and now more than ever it´s clear to me  that Hans Landa was aware of the identity of Soshanna in that moment. You can see how he literally reads her face, he just let her go so he could play his cards if Basterd´s attemp of killing hitler failed.

Strudel are made with lard (pork). Mixing pork and cow byproducts (creme + milk) is very unkosher. This was a trick to see if she would refuse to eat/drink thus discovering whether she was Jewish or not. She didn't fall for it. He's a smooth bastard.

@5ilverhalo I think Landa knows full well who she is, that's why he ordered the milk. I think he was just enjoying himself fully by toying with her. The very end, with the "There's one more thing I wanted to ask you." is just him further playing around. Besides, strudel contains shortening and milk in the first place, adding cream doesn't make it treyf.

@nyc14gauge I rather think he doesn't exactly know who she is (he hasn't seen her face in the first place), but he probably knows she's a jew. I think he was fully satisfied as a detective when he found her family at the beginning, and he NEEDS her theater for his treachery scheme and doesn't care anymore about the nazis' hunt for jews at this point, that's why he lets her go.
