Anyone that is playing an AOE prot pally but isn't drawing at least 4-8+ mobs, isn't playing the build correctly. The whole point is to take advantage of the auto-restore per hit skills while using ret aura and a spiked shield and sometimes consecration for damage.
This is correct, 5-8 is recommended (if you want no delays and end the fight with full hp and mp) to take full use of all your prot spec skills that auto-heal per hit, but with the right stats and gear you can take on 10-15 as long as they're melee and not spell casters or rangers. Look up the AOE prot pally guide that uses ret aura if you don't believe me, it's seriously boring to level after that, and you end up with so many rare/uncommon rewards from soloing instances that you really need DE.
