  • Another way instead of using the lemon juice is to use vinegar. I find that way much easier.

  • Hello TitliNihaan. I've tried this with whole milk and the paneer is fine but once I start to boil them they break down into little pieces so no more balls. What am I doing wrong?

  • @susanshelit Did you knead the paneer for a long time? It should hold together really well...

  • @TitliNihaan Its the milk. They do something to the milk in the stores over here that 'destroys' it. I just bought wholemilk straight from the cow and the paneer is fine and so is the rasmalai. It tastes great!

  • I can tell you that this is an excellent rashmalai recipe. Rashmalai is originally from the Bengal region, and I have eaten Rashmalai in legendary stores in Calcutta and Bangladesh, and this one you have here is true to the original. The Indian/Bangladeshi versions tastes differ because of the milk used and they use a lot more sugar. Your version is healthier. Thanks for bringing these great recipes to the West.

  • @jonco59 You can make them in an ordinary pan but you will need to cook them for slightly longer - about 10 minutes

    I tried to make rasmalai (cow milk from belgium) all went well. But when i start eating it it is kind of hard from the inside. I want to make real rasmalai like the commercial quality which is soft from the inside.

    What went wrong?

  • @1stjew I've never experienced that. My feeling is that you might have made the balls too large to be cooked properly on the inside????

  • @TitliNihaan I do not own a pressure coocer. Do you think that is the cause?

    I just checked as the videos on youtube the ball gets at least twice the size that was not my case.

  • ok Titli, but if a pakistani is criticising about what you did wrong, be the bigger person and accept it. we're only helping so next time you can fix the tiny flaws. its just the method of cooking that makes it actually Pakistani food. it's only better for you. you have no idea how elder women from pakistan are. our mothers are ALWAYS telling us NOO, dont cook this way! even tho its been yrs we're doing it. you shouldnt feel offended.   • Presuming you are English it is imperative to say ,like an Indian you cannot sit in India and make a perfect beef wellington similarly you cannot make a perfect Rasamalai sitting in England. No offence and cheers to your efforts!!

  • @ustinov10 I don't aim to make a "perfect" anything! Many people these days are brainwashed into thinking that they shouldn't even try to cook anything unless they can cook it "perfectly", whatever that means. People should simply enjoy cooking and eating the food that they make.

  • Titli, instead of stirring for an hour for the final stage, could you use evaporated milk - warm it up and add the nuts etc and still get the same flavour? Reducing milk is such a pain!

  • @puffinstuffsmum You could try it, but I would use unsweetened evap milk and might even dilute it a little with milk.

  • i used to work in an Indian restaurant and I was slightly addicted to the Rasmalai, I never thought about making it at home..never mind making my own Paneer...yum SO tempted

  • Made this today! Me and my mum were really scared the dumplings would go all crumbly in the pressure cooker, but I kept faith.. and they turned out perfect! =D 10/10 for the making process... the tasting process is in a couple of hours after iftar.. I hope it tastes good (though I have a feeling there's no need to worry)

    Secondly, can we substitute almonds with pistachio? Or can we use them at all in the first place?

  • @Desi4evah You can add rosewater or kewra if you like. It will add extra flavours :-)

    I use a mix of nuts just to show that you can use both almonds and pistachios. You can use only pistachios or only almonds - it's up to you!

  • hey, yes i did make the paneer fresh, and i only used one weight on the cooker and let it begin to whistle then i turned it off released the steam n had lovely soft bally things but not quite sure what happend, could it have been that i had let them cool for too long?

  • hey titli, i made this yesterday and did exactly as u say to do but my paneer balls tasted horrible even when they had been left to cool and absorb the milk they were hard n tasteless, the milk however tasted luvly! HELP PLEASE!!
