@24supersweet - It just so happens I was visiting with a cardiologist the hospital recently hired who was a Tulane grad. He told me another doctor (GP) I knew was also a Tulane alumni (him not moi.) We had us a nice talk about many thangs down home New Orleans.. crawfish boils, seafood vs sausage gumbos, Oh my... put me in the mood for some zydeco.
@kevin770 - thanks, but I think it needs more salt. I'm beginning to think "lowering sodium" doesn't actually extend life - just make the time we have seem longer...
I understand there are hundreds of different ways to make boudin but I start by cooking a whole boneless "picnic" pork shoulder with my seasonings when is cooked I grind it with green onions then mix the stock with the rice and ground up pork and Green onions stuff it and there ya go
