As the weave gets smaller and tighter it simply won't let the air pass through. The drape of the modern stuff is not like the old fabrics.
Good points raised here. Lightness is not always the best judge of how cool a fabric will wear. The heavier, more loosely woven linens of the past probably wear better and cooler than the really thin, denser stuff made today.
