@accoraldivad25 I have noticed that too. That and the fact that he uses many uni-taskers. Like the roller, a pastry brush could be used for anything similar to the egg wash, but that roller could only really be used for that one task. The principle is sound, but he doesn't always follow his rule. Still the best cooking show ever. I'm just a nit-picker I guess. LOL
@ninjaswordtothehead That's exactly what I was thinking about that uni-roller! What else could you do with that? Frost a cake? Brush a pan with it? Awkward, that. But what really caught my attention was that video insert from an earlier show in which he had stated NEVER to add oil to boiling water for pasta. I had objected to that myself since that is what I always do and never had any problem with the pasta when I did.

Not once have I thought that any of Alton's recipes were gross... However, his ravioli method for this episode (sans the pastry, of course) is horrible. It's too "Americanised." :/
His salsa episode made me laugh too but it doesn't mean it's bad, it's just different.
It is diffucult to embrace new things when one love the old and tried ones so much; but one should always at least try it, you never know what you might find.
hey, nothing wrong with prepackaged, processed, chemical laden foodstuffs every once in a while. sometimes i'm in the mood for something homemade, sometimes i just want a can of beefaroni.

6:37 - 7:10 (33 seconds) Roll the dough into a snake.
7:12 - 7:20 (8 seconds) Make the blank
7:40 - 8:26 (46 seconds) Rolling out the blank into a round
9:16 - 9:46 (30 seconds) Filling and folding
=1:24 for each tortellini
Repeat 12 more times for each snake, and for 3 more snakes
= 1 hour 15 minutes of doing nothing but rolling pasta.
I think I'd rather use the pasta roller
