  • hi, i bought some rice wrapping paper, however when i soak the rice paper with either warm or cold water, and it went soft, but.. it smell and taste a bit weird, so what is the best way to treat rice wrapping paper??

However, in the closing I want to suggest you can use a kind of sauce which is called "mắm nêm" in Vietnamese. It will give the perfect combination of flavor rather than fish sauce. You can also try snake head fish's meat ingredient. Moreover, You can fan gently water from your hand into the papers and your papers won't get so wet instead of immersing it into water

Vietnamese spring rolls require all fresh ingredients (vegatables, shrimp, pork, etc.) instead of frying method like Chinese rolls.

    China had occupied Vietnam for nearly a thousand years so there are some influences in cuisine before the French colonization. Stop posting your prejudiced comment if you want people to respect you.

  • Well vietnamese people can be really friendly and nice, once you get to know them. However, I got yelled at from one viet girl when i said that vietnamese got french influences in it.

    However, viet food is highly underestimated in this country. I love how viet food got seasonings from China, india, china, france and so on. Deep rooted history, diverse flavors depending on region and extremely colorful dishes.

  • @Fungusjones Yes,They do come in all sizes. It's strong enough if double ,triple , or quadruple sheets. The more sheets you use the stronger and tougher the role is. In fact, it's like rubber band.

  • I've always heard of these called spring rolls and the fried version egg rolls in English. In French we also called them spring rolls ( rouleaux de printemps) whereas the fried ones is called "nem".

  • In Vietnamese, this traditional dish is called "gỏi cuốn," which means "mixed salad roll." In English, it is called summer rolls (disbelievers, google it if you must).

    It's a delicious, versatile, and might I even say easy dish to learn.

  • @xxbaybiee Even though they're technically spring rolls, these are actually given a different name, because they use vermicelli noodles. Between the two, there isn't much difference except for the condiments used, so many people (including South East Asians) mistakenly refer to these as spring rolls.

    You have the right ideas, except for the fact that these aren't called spring rolls.

Still, contrary to your beliefs, what you call spring rolls are really called summer rolls. Spring rolls are often mistaken for egg rolls, which look and taste similarly, except egg rolls use a wrap made of egg as opposed to rice or beans.

    And I'll be darned about my race, since my parents came from Da Nang and Vung Tao and I was born in Sai Gon and grew up in Long Khanh.

    If you were to reference noodles however, different ingredients make different dishes. If you were to put chow mien into a pot and cook it, the dish would be much different than if you put in bun (rice noodles). And still that would be different than if you used my (egg noodles). And still that would differ from mien (bean noodles). Yet westerners still call it noodles.

  • I am not Vietnamese, I use any dipping available in the stores in Toronto. I have found this rolls are healthier, because it is not fried, so it is not oily. I also use small dice of mushroom, spinach and other vegetables, cooked them up a little bit and cool them down, then I wrap them with this white Vietnamese wrapper. I am being creative. If I cannot find the dipping I want, I dip the spring rolls into oyster sauce, or light soya sauce.

  • What kind of Vietnamese are you?! A hoisin sauce-peanut butter-vinegar mixture is the preferred dipping sauce for "goi cuon," not the fish sauce mixture you have! You should be ashamed . . . even though what you made looks tasty and is making me "chay nuoc mieng." :)

    - Yes, the skins ARE made of rice, not tapioca. You're boldly ignorant.

    - She made a spring roll that she likes. It's not the only spring roll in the world. Use common sense and realize you can put anything you want in them.

  • Sorry for the double post! @annaernestine: The only herbs she used in the spring roll was the one she used for decoration. When she picked it she referred to it as "this." I'm fairly certain it was lemongrass because they said it was used for the scent. If you were asking about the herbs in sauce, it was a "sour fish" sauce with lemon, chili and garlic.
