If you watch the video carefully, you can see that the 1st hokage uses normal, natural trees in his jutsus. But Yamato uses "timber" rather not trees :) It's quite interesting :)

No you only use the "-me" when using the plural. It's Niidaime, Sandaime, Yondaime, Godaime, Rokudaime, Shidaime, Hachidaime and Kyuudaime. But it's Shodai. ;)
