I see this is a 2 y/o video and I'm guessing you have gotten much better but knowing items, matching those items w/ Pokemon, developing movepools, and training the Pokemon all factor into being good at it. I've EV trained about 21 Pokemon before I got my current and seemingly permanent team. And I raised about 30 before those 21 before I even heard about EV training so yeah.
I happen to like it, so i play with it. It's not like it was ubber powerfull and unstoppable or imposible to get outside some super secluded event or something.
So I don't feel bad about playing with it, if that was what you meant.

They are just recalculated, taking into account your pokemon's effort values.
Meaning that if your pokemon was lvl 100, then yes, its stats for the battle would be about half, and if it was lvl 75, then it would be about 2/3 rds and if it was lvl 25, the stats would aproximately double, and so on
Ice Shard has a better priority than Razor Leaf (+1; it's one of the attacks that "strikes first in a turn"); if a Quick Claw activates, the Pokémon will go first ONLY if it uses a move with the same or higher priority than the attack made by the opponent.
I just wanted to point out that Gyarados, Torterra and Charizard all have 4x weaknesses to fairly common moves Electric, Rock and Ice. I would reccomend maybe changing one but if you like them the you should probably try and resist those sort of attacks with the type weakning berries.

Torterra's toxic-leech seed have helped when I have faced a couple of ... ubbers... (although I guess they were not trained)

Torterra's razor leaf has been very useful when I have faced a couple of water/rock/earth types at once. I remember I once took two pokemon at once with a single razor leaf. I was lucky though.
Zapdos has hidden power water, but It looks like it is not very strong.
I know I have too many flying pokemon. I have been thinkig of switching gyarados for lapras or zapdos for rotom (I am lousy, I build this team around torterra's earthquake)
You have 3 flying pokemon is bad change please. In single battles a single jolteon can win you with hidden power ice and thunderbolt and the stealth rocks in your team is fatal, more in charizard and torterra change the moveset and teach gyarados taunt
Charizard: Lose Flamethrower for Hidden Power or Focus Blast. Also, forget Charcoal and give him Choice Specs. You'll kill with that item although you can only choose one attack.
Gyrados: Lose the Sea inscence for Wacan Berry or leftovers. Other than that, his moves are fine.

didn't get to use that strategy this time though
Well, battles can be fixed at level 50, as per the rules, but pokemon change level for the battle only.

On the Items, I am not sure.
Torterra has quick claw but maybe something to help him survive ice would be better. Same with Gyarados (wacan berry might be good)

On the other's moves, I am happy with.
Torterra's razor leaf has been very useful when I have faced a couple of water/rock/earth types at once. I remember I once took two pokemon at once with a single razor leaf. I was lucky though.

Zapdos: What Hidden Power does it have? To not kill your own Gyrados, give it Thunderbolt instead of Discharge.
Torterra: Switch Toxic and Razor Leaf for Wood Hammer and Stone Edge or Rock Slide. Razor leaf's way too weak.
