It is called thus because to the french at the time of its invention, choux was to them what the little puffed up balls resembled. It is similar to how the french have named potatoes "pomme de terre" which means literally "apple of the earth" even though it looks tastes is nothing like an apple. Geez.

@lovedapudding They're just trying to tease you. There's nothing nerdy about cooking and in later grades you can take cooking classes for your arts requirement.

It is because when you are stirring the dough, at first it seems to have great big leaves of dough before it comes together. In addition when used for profiteroles, it grows a large bloom head.

the problem is that since flour can be piled lightly, or packed tightly, measuring by volume can be very inaccurate. You can fill a container with flour, then push on it a little, and the container will suddenly be only 80% full
I used chocolate pudding in my éclairs once... although Alton said use 3/4 of the liquid the package requires... DON'T follow that advice when using chocolate pudding, it's thicker and heavier than vanilla. Use all the liquid required in the chocolate pudding... I almost broke the bag trying to squeeze out the chocolate.
I have little to zero cooking experience... for a group that I'm part of at my college campus, we had a Christmas party... I made chocolate éclairs and they turned out awesome! I did everything exactly as Alton said.
It tastes a lot like a donut, but it's a little denser, and the outside is more crispy.
Next time you're at a fair or whatever, get one. They're delicious, even if they have enough sugar (when you add toppings) to give an elephant diabetes.
loneranger16 ,no i think its cool , you know mebbe you cant participate on the iother shows but most of these baking shows and candy shows i think you can , im no expert not even vegan anymore however when i was with my ex ,Vegan cookies were always a regular treat for us , im sure you can probably find some vegan freindly ingredients for baking

you can use normal flour if you want, but it won't puff up as much and wont hollow out as much as bread flour.

When I used flour the other day, it had a conversion right on the bag. From what I calculated, 1 oz of flour was about 1/4 cup.
