i am sorry but this is NOT what we know in mexico as chilaquiles, this is some bullshit gringo crap that a neoyorican puke concocted, wheter the dish is good or not is up to the person to decide, but my comment here is the authenticity of Chilakiles..this are not...
The origin of enchiladas must have been a way to use the hard tortillas from the day before and as it was, you only need salsa to soften the tortillas and that's it. I make my chilaquiles with chicken, cheese, chopped onion and cream, sometimes i put some lettuce and that's it, this was like a very complex way to make chilaquiles. And if you use chicken broth instead of water, they have a way better flavor...
Calm down guys, that's why he said " there is a lot of different ways of making it" even in mexico nobody makes them exactly in the same way, "this is just one way of making them" he said it.
Theres a lot of ways to make chilaquiles, but im really pissed off because there is a stupid trend in Mexico, some people use nachos, ad some salsa and voila!! Instant Chilaquiles.... thats bllsht... even a NewYorker know how to prepare it.... its ridiculous.... i will use the chorizo next time... thats a good idea.... i like to serve it with beef steak, some chicken breast or scrambled eggs.... chipotle is a nice way to make it new... but some other chilis could be added.
THANK YOU ! KIDZERO88 I PERSONALLY MAKE MY OWN CHILAQUILES THAT IS NO WHERE CLOSE TO WHAT I SEE HERE...THERES NO WAY CHIPOTLE IS USE OR EVEN GARNISH WITH CILANTRO..IM SORRY GUYS BUT THESE CHILAQUILES ARE NOT AUTHENTIC...WERE MISSING THE ONIONS FRIED WITH THE TORTILLAS AND THE EGGS ....WHAT HAPPEN TO THE CHILE ANCHO AND CHILE DE ARBOL WE NEED SOMEONE THAT CAN REALLY REPRESENT MEXICO WITH REALLY AUTHENTIC RECIPES
I wouldn't make chilaquiles this way, but I do like the sauce they made. It seems like with a few tweaks, I could make a decent ranchero sauce out of that.
and to you haters who just hate and say these videos are "so wrong", fuck you guys! get a life! All I care about is if it's delicious!

My god, I'm going to make them for the first time today (my mom told me how to do it) and I was hoping to get a better idea from here but F this! I would know from looking at this that it's wrong!
WOW, so many wrong things in this recipe. Chorizo, NO, Jalapeño, NO, Broiling, NO, Sesame seeds, NO, Radish, NO. Chipotle... Maybe if you like the extra kick although I'd go only with Serrano. Using Jalapeño and Chipotle in the same dish is a complete stupidity, considering the later is a smoked jalapeño. If you want a true mexican recipe in the U.S. look for Rick Bayless'.
Holy shit this is complicated. A blender? The oven? Any chilaquiles I've ever made always tasted the best just by throwing a bunch of shit in a skillet and mashing it all together. That's really all you need to do.

Those Chilaquiles look delicious, but honestly it is not classic/traditional Mexican Recipe. NO radishes, no chipotle (it is picante with just the green or red peppers, and to add chipotle??? are you crazy!) and just the tomatoes and peppers should be TOASTED not with oil and broiled. Chilaquiles in Mexico are not just a breakfast, they can be eaten at any time of the day. But hey, the organic corn tortillas are the best! Chilaquiles with re-fried beans!!! um, ummm, yummy!
i'm mexican and currently living in mexico. this recipee looks very good. I would use some white cheese that melts (not the yellow one) and i would grab out the radishes and ADD some chicken .
oH nO nO..Chorizo??? LOL..YOU MAKE IT LOOK SO FUNNY!! ( THIS IS SO TRUE-->"This recipe is Amercanized... Not the Authentic way of making them... Chorizo? They are Missing eggs and You NEVER add chipotle chiles "

Ok, im Mexican and i must say this looks pretty good, for the record if u dont want to use that much oil there are already packed fat-free baked "tostadas" in the market. And jalapeño might not be the better choise, i mean we barely know it and almost never eat it, use "chile de árbol" if u want to burst in tears.

Insurance, illegal taxes, the printing of money so the money you finally get has no value, and loans you can't pay WE NEED AN OVERHAUL

Why do people always have to broil, or roast EVERYTHING. They could have just in a pot of water boiled the tomatoes, gralic and jalapenos.
Instead of Cotija cheese try "Ranchera Queso".. yummy:)

That really does look delicious but so complicated. I'm Mexican and my family made it with tomato sauce, El Pato hot sauce, oregano, and monterey jack cheese or queso fresco. It still comes out great. Will have to try this recipe though.

Yeah! I remember doing it that way too, except we had the "grab bag" cheese, haha :)
