  • I have a friend who moved to New York from Tucson. He said it's very difficult to get good Mexican food there. If this is what passes for Mexican food in New York, I guess he is right.

  • lol White people have a different taste when eating Mexican food. They tend to really try and water down the taste of Mexican food due to it being to hot for them for some reason:P These people should try some Taco Palenque like we have down in the valley of Texas:)

  • The origin of enchiladas must have been a way to use the hard tortillas from the day before and as it was, you only need salsa to soften the tortillas and that's it. I make my chilaquiles with chicken, cheese, chopped onion and cream, sometimes i put some lettuce and that's it, this was like a very complex way to make chilaquiles. And if you use chicken broth instead of water, they have a way better flavor...

  • Calm down guys, that's why he said " there is a lot of different ways of making it" even in mexico nobody makes them exactly in the same way, "this is just one way of making them" he said it.

  • Of course, are not authentic mexican mexican chilaquiles, but its a nice way to prepare it.

  • Theres a lot of ways to make chilaquiles, but im really pissed off because there is a stupid trend in Mexico, some people use nachos, ad some salsa and voila!! Instant Chilaquiles.... thats bllsht... even a NewYorker know how to prepare it.... its ridiculous.... i will use the chorizo next time... thats a good idea.... i like to serve it with beef steak, some chicken breast or scrambled eggs.... chipotle is a nice way to make it new... but some other chilis could be added.

  • I wouldn't make chilaquiles this way, but I do like the sauce they made. It seems like with a few tweaks, I could make a decent ranchero sauce out of that.

  • WOW, so many wrong things in this recipe. Chorizo, NO, Jalapeño, NO, Broiling, NO, Sesame seeds, NO, Radish, NO. Chipotle... Maybe if you like the extra kick although I'd go only with Serrano. Using Jalapeño and Chipotle in the same dish is a complete stupidity, considering the later is a smoked jalapeño. If you want a true mexican recipe in the U.S. look for Rick Bayless'.

  • Those Chilaquiles look delicious, but honestly it is not classic/traditional Mexican Recipe. NO radishes, no chipotle (it is picante with just the green or red peppers, and to add chipotle??? are you crazy!) and just the tomatoes and peppers should be TOASTED not with oil and broiled. Chilaquiles in Mexico are not just a breakfast, they can be eaten at any time of the day. But hey, the organic corn tortillas are the best! Chilaquiles with re-fried beans!!! um, ummm, yummy!

    i'm mexican and currently living in mexico. this recipee looks very good. I would use some white cheese that melts (not the yellow one) and i would grab out the radishes and ADD some chicken .

  • Why do people always have to broil, or roast EVERYTHING. They could have just in a pot of water boiled the tomatoes, gralic and jalapenos.

    Instead of Cotija cheese try "Ranchera Queso".. yummy:)

  • you were doing great until... you dropped the god for saken fried tortillas in the sauce and chorizo... real bad ass mexican chilaquiles sould be fried torillas on the plate and the on top a very hot sauce, cotija cheese, radishes, cilantro and cream... your recipe was good but trowing the torillas in the sauce was a insult for that dish

  • You guys have to realize that Chilaquiles can be made to whatever you like to add to it. Just like Ceviche, you add whatever seafood to what you like. There is no 1 standard recipe for Chilaquiles. Now that is ignorant. Gotta remember, the cooking in mexico is different in every part of the country, each different state and cities there. Mexico is very diverse. Mexico is made of Native American Indians, Spanish, Irish, German ancestry.

  • the man has good intentions but really does not know his ingredients and pronunciation is bad. True chilaquiles are just tortillas, onions, salsa green or red Crema and sopero cheese. Fancier versions add chicken or scramble eggs.

    Chilaquies is a peasant food therfore the basic recipe is plain.

  • Yo los hago al estilo mio.. se frie la tortilla,, se hace la salsa solo con tomate y chile ya sea jalapeño o serrano, se licua esto,, ya que estan fritas las tortillas le agrego la salsa.. le pongo la sal.. y aparte pico cebolla en trocitos y cilantro y lo revuelvo con queso fresco, despues lo pongo sobre los chilaquiles y los tapo y bajo el fuego para que gratinen nada mas.. asi como una pizza XD esa es mi receta mia de mi asi que son Chilaquiles Chio XD

  • Esta receta no está muy apegada a la forma los tradicionales chilaquiles, pero excepto por los rábanos se ven ricos. mmmmhhh ....chorizooo aaaaahhh.... Por cierto si quieren probarlos realmente ricos, pruebenlos con tortillas freídas en manteca de cerdo y huevo hervido rebanado al final; no muy saludables pero muy deliciosos.

  • Pues yo aprendí a hacerlos estilo Guadalajara y son más sencillos, tomate, chile de árbol, ajo, cebolla, queso y la crema es opcional, lo mismo que el huevo, ese se lo agregas poco antes de vaciar la salsa a las tortillas cuando ya están crijientes.

  • That really does look delicious but so complicated. I'm Mexican and my family made it with tomato sauce, El Pato hot sauce, oregano, and monterey jack cheese or queso fresco. It still comes out great. Will have to try this recipe though.
