I like the instructive bits like taking the green shoots out of the garlic because i was never sure if they were good or bad! But why remove the stem of the artichoke? Never really cooked with them much yet. May seem like common sence as its thick but wouldn't it taste nice if it was chopped up and boiled as well? I've no idea, your insight would be helpful on that matter.
