On a 125 I'd say 1st gear, but it'll depend a little on what tooth count sprockets you use. If you're running a bigger than stock tooth count on back try 2nd.
I took it to a local track last year. It was a modern practice track though, so it wasn't as fun as it could have been. I'm hoping to get out to an AHRMA track this year along with my 1982 RM250.
I have a 1979 rm250. Besides a few parts here and there those things need nothing but a good cleaning once and a while. They don't make 2 strokes like they used to.Those old ones are way more solid. They have wicked pull to them too!!
i had an 81 rm 80x noisest and smokiest bike ive ever had it was also the fastest and toughest 80 ive ever seen grace the dirt i cant believe my dad bought it for me it was soo fast i never made 4th gear much
I have a '78 OEM silencer that might work? I also have a ratty '81-'82 DG silencer. It's going to be the mounting brackets that are slightly different between years, which is pretty easy to remedy. If you're interested I can send you a photo of both. The diameter of the pipe should be the same on all the 125s.

I bought it running, but I've done some tuning and rebuilding just to get it complete and solid before restoration. I'll be restoring it and rebuilding the motor next year.
Thanks man, it is VERY fast for a 125. I'm 6' 3" 220 lbs and I don't hold it back. If you want a vintage bike you can ride hard, the 81-84 RMs are the way to go.
