I know there is a lot of fantastic british chefs these days, but Rick Stein understand Italian and French country food. He knows it's about good ingredients and keeping it simple.
A lot of british chefs just don't know where to stop. Maybe because the ingredients in England are usually not as good.
I attended a course at Padstow seafood school for a day, it was fantastic, one of the best things I ever did. Weather was great, food was great. Highly recommend it.
