As a veteran of many boils, the key to the flavor is letting them soak. Drop the crawfish in and return the water to a boil, boil 3-5 mintues, then turn off. The key then is adding a half-bag of ice to the pot till the water temp is about 190. The longer you soak them the spicier they get. I soak 30-45 minutes. WARNING . . . if you fail to add ice or cool down the water, you'll overcook the crawfish. You'll know because they'll be rubbery and/or be hard to get out of the tail. Happy eats.
When I catch crawfish, I don't use a trap at all. I use a stick, string, and bacon and I catch more than the idiot next to me with a crawfish trap. About 20 a day which is like 3 hours.
@ebob1392 Depends on if they are farm raised or trapped in the wild. Crawfish farms are all over the South mostly in Louisiana and they can harvest quite a bit at one time. Fisherman in the swamps lay out many traps at once, sometimes they get a huge harvest..sometimes they don't.
@1lsuRedneck is right!! Purging isn't necessary. The salt also makes them more difficult to peel. It wasn't mentioned here... But butter is also not a good thing. If you've ever eaten crawfish/mud bugs at pappadeaux's, then you know what I mean.
@brianlvincent69 I would politely disagree with the purging isn't necessary. It is 100% necessary if you don't want mud in your water and it gives it a "swampy" taste as my wife calls it. You don't have to use the salt though but you do have to rinse them at least 2 to 3 times but I don't let them sit for 25 mins.
@romer2cc sorry if i mis- led you. what i was trying to get at is..... strictly the salt... Rinsing them until the water is clear as day is a /must/!!! However, through decades of experience within my families cajun roots, salt makes them extremely difficult to peel. It also differs the boil seasoning as well. To each his own though. I was only trying to imply that salt is not needed to have a true and "traditional" crawfish boil.... especially not several boxes of salt.

Crawfish live in fresh water. When you put them in salt water allot of them will die. If it makes one feel better eating them purged, then have at it. I've had them both ways and honestly can't tell the difference. Dirty bugs that haven't been rinsed will add grit to the water that will get into the heads.

@johnnyguilbeau After the first 5 minutes of boiling with the flames on, you are not finished cooking the crawfish. The 25 minute soak afer cooling the pot finishes the cooking process without making the crawfish soggy.

@Dano78229 Salt is traditional, but some folks now say it's not really needed. What you have to do to purge them, salt or no salt, is keep covering them with water, draining, then covering and draining again until the water runs clear.
If you've got chlorinated city water, you probably don't need the salt, but you will need more changes of water than without salt.
