My wife and I have eaten it lightly steamed with vinaigrette. She really liked the flavor as did I. We used the stem and all, and at least in that preparation the stems didn't seem too tough.
THANK YOU FOR THIS VIDEO. WE HAVE A GROUP OF LOCAL FOOD ENTHUSIASTS WHO ARE GETTING TOGETHER TO TALK ABOUT FOODS IN OUR ENVIRONMENTS HERE IN MISSOURI.... AND I WAS ASKED ABOUT HENBIT. I KNEW NOTHING MORE ABOUT IT THAN IT MAKES A BEAUTIFUL CARPET UNDER OUR ROWS OF GRAPES IN OUR VINEYARD AT THIS TIME OF YEAR.... NOW I KNOW WE CAN INCLUDE IT IN OUR COMMUNITY SALAD AT OUR UPCOMING MEETING. THANKS SO MUCH. THIS IS A GREAT SITE AND A MOST INFORMATIVE HOST. grapes4you, missouri
You're welcome. As always, make sure it is henbit and of course try some yourself first so you can recommend it with self-confidence and the assuredness that it is indeed the right plant.

The still photos add a LOT. I would feel much more confident identifying it after that.

Are the stems edible on this plant? I just transplanted some for indoor growing and was wondering if it can be treated kind of like purslane. Thanks!

@outsiderdf well... yes, but they are a bit tough and not that tasty.

You also mentioned purple deadnettle (which is in my front yard).
It doesn't smell too appealing. Is it best to cook or ok to eat raw?

@oshuatee Either can be eaten raw or cooked, but neither have much of an aroma. Do you have the right plant?

99.9% sure. It is not a strong smell, but it is a bit musty. It could just be that I'm not used to smelling "weeds".
