  • @angelabrandy Thanks -- the next bunch of recipes will be more savory, but I'll keep my creative juices flowing or simply eyes open for another "sweet" type recipe too. Have you tried the Creme Brulee with Buttery Pecan topping recipe yet? That is honestly still probably one of my favorites.

  • @hyoonies1102 The one I used carbs were almost entirely from fiber from the coconut, so I wouldn't stress about them. The ingredients label was pretty much just coconut and water too, but thanks for the headsup on the alternative. I'll check it out next time I am in the store.

  • What is the ingredient before the cocoa powder?? Its a thickening agent, I have never heard of it, is there an equivelent?

  • @Isdsd2929 Xanthan gum is a low carb thickening agent. You can use Guar Gum and it interchangeably. Commercial not/starch product is probably the best acting of them all. Arrowroot is a bit less starchy than corn starch, but is higher in carb than either of the gums..

  • Is it possible to use cream instead of coconut milk? I really don't like coconut milk and I would be afraid of making this and not being able to enjoy it. Would cream be an acceptable replacement, or not in induction phase? Thanks for taking the time to show us these great recipes!! Nothing has worked for me like Atkins.

  • @thepamperroom It might work. Cream would have the richness of the coconut milk, but to be honest, there is a similar recipe called "clouds" without the heavy cream and xanthan gum that you could do instead. If you search Linda's Low Carb site, you should be able to find the recipe.

  • @ALETHEIA8881 You certainly could do something similar sans the cream cheese. It might not be as rich or creamy, but I bet if you whipped it in a mixer the coconut milk would get airy and fluffier. It'd be worth a shot at least.

  • could you please post the net carb content for this recipe? Also, I went to the local health food store to buy the coconut milk. I bought the same brand of coconut milk but mine says organic. Other than that it is identical but mine has no dietary fiber. Could you maybe explain this. Thank you so much!1

    175 Calories; 15g of Fat, 10g Total Carbs (3g Fiber = 7g Net Carbs); 6g Protein.

    I am guessing the label for yours could be wrong or you might have thin coconut milk not thick. More likely the nutrition label is wrong if it is indeed the same as mine.

  • @LetMeLivetoo I never have had an issue, and actually use Splenda more than I do Truvia or other Stevia extracts. That said I only have 3 servings per day or less of any artificial sweeteners, which is well under the safe daily intake limits.

  • @yeshualovesu2 All-fiber bran buds (9g) are pretty low carb per serving. If you are google low carb granola you'll find a couple recipes as well.

    I do this when I want a good granola-like morning cereal.

    1/4 C chopped roasted almonds

    1/4 C heavy cream

    2 diced strawberries

    2 splenda packets...

    Put everything in a bowl and pour the cream over it...

    it's really good.

  • Would the ThickenThin/not starch thickener that netrition sells work in place of the xantham gum. Recently I couldnt decide which one to go with and bought the thickenthin which is pretty expensive so I hope it will.

  • Most grocery stores with a health department will have it in there. It's a bit spendy $10 for 3-5 oz, but you use very little each time. I personally bought mine at either Ebay or Netrition internet store.

  • This may be a dumb question but would a little bit of cornstarch+water be a good substitute for the xanthan gum?

  • One of the goals of the Atkins Diet and low carbing is to reduce or eliminate most of the refined sugars, flours, and starches, which would include corn starch. This is due to the impact on your blood glucose levels and insulin release. In a non-low carb lifestyle, corn starch would be fine.

  • Not on Induction -- find yourself a Acceptable Foods List for Induction and memorize it. That way you will absolutely know.

  • You are allowed a tablespoon of lemon/lime juice each day, and that is about 3g of carbs on Induction.

  • but do not consume lemons or lemon juice after that at all? just had some chicken tonight cooked in lemon juice, about 1/2 a lemon. not a good idea? thanks BO.

  • Outside of Induction, you can eat as much as your amount allows. During Induction, you are limited, but even at half a lemon how much juice did you actually consume probably not much more than what's allowed.

    We each have to reach the point where you know the change has to happen and where you know what needs to be changed. Someone outside yourself can't make the change for you, so I am so pleased when I keep hearing the success. Self-doubt or self-destructive behavior is so easy to fall back upon.

  • I use this recipe its really so close to real bread. 1 tsp sugar [no need to worry its to feed the yeast] 2 tsp of fast yeast 1 cup of oat flour 1 cup gluten flour 1/4 tsp salt 1 large egg 1 tblsp oil 1/2 cup full cream at room tempature 1/2 cup water warmed 60 carbs per loaf , 15 slices per loaf so 4 carbs per slice. If using a bread pan bake at 375 degres for 30 mins.. Ricky

  • Another great video Kent keep it up they have certainly helped me, total loss to date is 84 Pounds gone from a 44inch waist to a 35inch even had to buy a new crash helmet a size smaller its taken me nearly a year and a half and still going strong thank god for home made low carb bread..

    PS - That is one thing I have always been tempted to buy is a bread machine since commercial options are too much or too fake.

  • After Induction, coconut would be in the nut/seeds rung, which is one of the first rungs to go through.

  • I have found it in the health foods section of a decent sized grocery store near the bulk foods, but not in Wal-mart or Target yet. If you rather purchase it online, Netrition, Ebay, and VitaShoppe allhad good deals on it. It's a little spendy ($8 for a couple oz), but you only use a little. It's good for sauce making as well.

  • The arrowroot would be a bit higher carb count (2.2g per tsp), but it should perform as well The coconut milk I think is the amazing part - it really is quite delicious and gives just right richness.

    As for Calories, I am still working it out after I changed the recipe from the original. My current estimate based upon 4-5 servings is 200-240 Calories.

  • oh my! anything with cream cheese in it, I am in heaven...this all looks so rich and tasty. I will for sure try this later on, I like that you lower the total carbs and reduce the sweetener.

  • It still is really sweet - be sure to feel free to reduce the Splenda further. Plus lowering the erythitol in the form of Truvia eliminates some sugar alcohols (granted one of the better ones) too.

  • It's so easy and quick to make. It has replaced our other standard LC dessert for when we need one - Panna Cotta. I think this recipe has more options as well with other mousse ideas. I hope you like it.
