interesting how cuisine evolves over time. Season 7 was back in 2003, and AB says you can find Panko breadcrumbs in the ethnic aisle. Most modern supermarkets I've seen, including the one I work in, now have Panko breadcrumbs in the breadcrumb section.
I'm from Hawaii and I've never heard of macadamia nuts with mango or marshmallows. Doesn't sound bad, but sometimes Alton's cultural research is as bad as his pronunciation of foreign words. Mac-nut pesto is good too by the way.

i made the macadamia nut crusted mahi mahi mahi and i must tell you it was very very tasty . very salty and nutty and the coconut milk gives it that slight tropical flavor. thanks ab for the recipe. you did it again .
Sounds like a sound glitch to me, maybe during the capture of the episode. It just seems like that would be a weird time to have the squirrel say something.
