HO/PO's do work in GH1 except you really have to follow the way you do it in the tutorials. In other words, there's a different way to hit HO/PO'S in GH1, and that way is how the tutorials tell you to do it.
Can someone explain to me why he almost never uses hammer-ons? I know there is something different between GH1 HOs and GH2 + 3 HOs but why does he strum all the hammer-on sequences?

Yeah hammer-ons are possible in GH1, but are really really really hard to do. Only a few people have mastered them.

Nobody's actually MASTERED them, because it would take so much work, you're better off just strumming. f4phantom's pretty good with them though.

No one has "mastered" GH1 hammer ons. They're just completely impractical compared to strumming every note.
