I curled the cucumber using a spiral cutter which can be bought from good kitchen shops. It is a garnishig tool, I will show you on a video at some point.
yum salad be having loads of them now the weather has improved. had tuna salad for tea tonight with light salad cream 1 1/2 points. leaves points for my kit kat senses 3 1/2 points. mmmmm xxxx

It is VERY filling.
Instead of the yogurt and to keep points down I could have put a few low point/fat sponge fingers in the bottom to make it a tad like a trifle.
