Chef added a few drops of green food colouring to the ice cream base and someone asked the very same question. He replied that food colouring is quite often an important additive to the 'psychology' of food: meaning that surveys show that with the addition of colour, people actually believe that the flavour is much stronger than non-coloured food.
well, vanilla ice cream like most ice cream is flavoured "iced cream", and i assume you need much less vanilla to flavour an amount of ice cream than with, say, chocolate or strawberry, and you dont get the uhh... colourful sensation of crushed fruit or melted chocolate. i dont know about pistachio nuts, ill have to google it.
@richiebabe24 Peas and beans are legumes. Nuts have a very specific definition that isn't used in culinary circles. Various kinds of acorns were widely used by California Native Americans who were notably healthy and long-lived until taken into missions by the Spanish. To get the best out of acorns, a person has to know the techniques.
This is a really cool and interesting show. I just found it today, I wish we have it here in the states. Not an American version of it though, I think that would suck.
