Yacon root powder or syrup works nice in cookies.

I BAKED ;) hemp seed - walnut - coconut cookies yesterday.

With a combination of yacon, sugar cane juice and stevia.

I let it stick it all together with egg white.

The yolks I do use raw in mayonnaise with cold pressed oil and unpasteurized vinegar.
