i think thet using cake flour coz cake flour got less gluten..and the salt just a bit for flavouring..for me technic are the most important thing to make noodles..

you have to kneed your dough for a really long time. if you notice the guy use his whole body cuz the dough gets really tough. you have to let the gluten in the dough become elastic.

korean food is way different then chinease food. chinease food is more greasy and has MSG. while korean foord is not that greasy and has very little to not at all any MSG in the food

@danielsuh23 not all chinese food is greasy (it depends on what you order) and i always ask for no msg when i go to chinese restaurants. so let's just say that chinese and korean food are just different. i enjoy both.
by the way, to answer your stupid comment. Those noodles are for a dish that's "Chinese" made by koreans called: ja jung myun (noodles in black bean sauce). Not really chinese, but french fries aren't french either, so no stupid comments on that.

Umm, it's a lower gluten-content flour. You can't use bread or ap-- gotta use cake flour or pastry flour.

you're thinking of American Chinese food, aka Fast Food Chinese. Which, as you said, is loaded with salt and fat.
Actual Chinese cuisine, like any food, is healthier made at home. Just like a home made burger is healthier than going to MacDonalds.
You can't generalize by using fast food.
All Asian cuisines are unique and all have delicious items to offer~
