For instructions and steps on how to grid data from a data file, please see video #3 "Gridding Data". That goes over the gridding options. It your grid file is not smooth enough, you can try increasing the grid resolution (# of Lines), you can try a different gridding method (ie. Kriging or Radial Basis Function), or you can use Grid | Filter or Grid | Spline Smooth after the grid is created to smooth it.

Where do I get those grid data or files?

Are they available for all countries?

oh my i was a little disappointed...i thought you'll gonna make grid data manually and not from downloaded source...i expected you will create a grid data from excel, I tried to make grid data but the surface isn't smooth enough unlike in your video...i have a column of label, x, and y coords...then i use surfer to create grid data...but the outcome is not smooth enough
