@dineshshyamlulla hey,make paneer at home.Just add small half cup of vinegar in just boiled 2-3 litres of milk.u'll see its changing into paneer in few seconds.Then just squeeze that into something like a piece of cloth.Tofu is nt a replacement at all.

Chef, I personally think Navratan Korma is a mughlai dish and came out during reign of Akbar who had nine jewels (nav-ratna) in his court. As far as ingredients, I think you got it right having mixture of fruits, vegetables, and nuts but in constrast to yours, there should be equal amount of ingredients - three main vegetables (no greens), three nuts, and three fruits in mild korma gravy.

Yes yes, he is not concise about quantities. Very frustrating. This remains a big reason why my home cooking does not match up to any recipes I see or read.
But his cooking, and Jaffrey's books, are well intentioned, if not perfect.
What is interesting is that is what I like about these videos. He just "eyeballs" the amounts & away he goes with cooking it all. I love that approach.
