@FlowersInHisHair You can sub and probably have a tastier dish, as grits have no taste until you add spices etc. If you like a deep corn flavor you might want to toast your cornmeal on a rimmed sheetpan in a 300 degree oven for 10-15 mins. I do this when making cornbread and really enhances the flavor.

I made these shimp and grits. My husband doesn't even like grits and he LOVED it! I improvised just a tad, adding a slash of half/half with the chicken stock. I like a creamy gravy. Thanks, Chef!
I, too, love the remark not to worry about the butter because ham is being added in. That was the good laugh I needed. I am SO going to make this soon! And yeah, I'm getting married soon, and even though my wife-to-be hates rosemary, she hasn't banned it from the kitchen, and has already agreed to 'pretty much' have the run of the kitchen. But, I'm sure I'll be doing a lot of surrendering to her, and mostly, that's OK....as long as the food is good....and other things :)

here in europe we never use something like chicken broth, we always use water in everything, doesnt adding this to all your recipes instead of watter add lots of calories?
