  • @KevLo64 That's the French mirepoix.

  • The End was Classic lol

  • "some" butter, yeah, SOME butter :D

  • it looks super delicious...but....Im just not brave enough to eat such huge amount of butter....

  • chefs johns voice is like two voices in one

the soft friendly voice we are used to, and a nasally chef john thats comes along at the end of sentences

    go ahead, listen again

  • is it just me or does chef john sound like a pedo when he says "aand as always, enjooy 8D"

  • I'm hungry Chef John. XD

  • "There's two ways to do things : The way your wife likes them, and the wrong way."

    LMAO!

  • In my head, I was thinking, wow, this would go well with rich rather than grits...bingo!

  • Watching ur videos just automatically make me happy :D

  • HAMMY BUTTER FTW!!!!!

  • omnomnomnom*.*

  • Pft, most people put more butter in cookies. xP

  • The awkward moment when....

This awkward moment bullshit is getting old.

  • Chef John, I know you like spicy food and I do too but is bad for me. So I skip the spicy stuff and still tastes good. I wish you would make Louisiana style cajun shrimp which is non-spicy. Is that possible?

  • Food... orgasm.. AAAAAHHHHHHH

  • dang i wanna make this but too much butter

  • So, basically. He's saying that this isn't for calorie counters?

  • YES!! sooo... when I wanna eat a tub of lard its OK cuz I add some ham to it... :D

  • Noope, Chuck Testa.

  • i just realized ive been watching these videos for an hour

  • I must stop seeing this videos when I'm hungry as hell

  • Hello Chef John,

I just love all your videos, they are so simple and easy to follow. I just watched your Ham and Shrimp Gravy Recipe and I was wondering to you have DVD's?

  • I just made this dish ... so SO delicious ... thank you!

  • lol "the way your wife likes them and the wrong way" your a wise wise man

  • your wife is so lucky

  • u gotta have garlic! lol

  • This was amazing!! I think I found my new favorite dish and it wasn't even that difficult! Thanks!!!

  • oh man, my saliva is drooling.

  • this was amazing, but instead of ham, I used chorizo

  • good replacements for the veg for someone who doesn't like peppers? Looks SOO good, but my girlfriend won't eat it.

  • @vinylreality i would suggest diced tomatoes, i would still taste good, but its better with peppers

  • I made this for lunch for my family today and it was a hit! Thanks.

  • I tried this recipe , it was delicious.

  • you should work with EpicMealTime

  • The best chef on YouTube, bar none.

  • Chef John...YOUR AWESOME!!!

  • I made this last night!!! It was amazing. My family and friends were highly impressed. Thanks so much Chef John for the recipe

  • Your wife is so lucky

  • Great video! Extremely simple and easy to follow, well done overall!

  • i eat that amount of butter every week.

  • I just made this today too bad it wasnt garveyish like i wanted but, it still taste great.

  • Unfair!

  • sauce veloute ... mmmmm

  • It's hard to find grits in the UK. Can I substitute coarse polenta?

  • @FlowersInHisHair You can sub and probably have a tastier dish, as grits have no taste until you add spices etc. If you like a deep corn flavor you might want to toast your cornmeal on a rimmed sheetpan in a 300 degree oven for 10-15 mins. I do this when making cornbread and really enhances the flavor.

  • @KissHope Wow, not just an answer, but an amazing tip too, thank you so much! I'm cooking shrimp 'n' grits for a friend of mine who's feeling homesick for her mom's cooking (she's from Tennessee) and want to make it as authentic as I can. wish me luck!

  • @FlowersInHisHair

You are more than welcome. When you are experimenting again, try the crispy onion rings that Chef John has here at Food Wishes, they are addictive. I call them crack rings...lol Good luck with your dish.

  • How on earth can 21 people dislike this?!? Looks fantastic, I am making it this weeksend, with peppers from the garden, and will serve over rice...Thanks Chef John!

  • I just learned that it's ok to eat a lot of butter as long as you add ham.

  • @cholulalv ham is pretty lean, i think thats what he meant. he didnt add his usual dash of sarcastic voice tone while saying it

  • gosh when i watch this i can even smell and almost taste it!

  • Seriously, do you do the same instructions in the bedroom?

I would fucking love if you did that. And again no homo.

  • COLD LIQUID INTO HOT ROUX = no lumps!!! damn after all these years of cooking i never knew that...thanks man!!! no wonder i have lumps in my gravy..

  • What are grits?

  • @ 2:32 you meant to say butter is not grease?? o_O

doesn't it have about 80% of fat content?

  • I torture myself by coming back to this video

  • I have watched this video a few times, and all I can say is Wow. I know this will be the yummiest thing I have had in a long time as soon as I make the time to make it. I will serve over rice, because I love rice, too. :-) Thanks for this one, Chef!

  • Made this tonight and put it over crispy mashed potato patties the family wet wild. its a keeper thanks for another great recipe!!!

  • I made these shimp and grits. My husband doesn't even like grits and he LOVED it! I improvised just a tad, adding a slash of half/half with the chicken stock. I like a creamy gravy. Thanks, Chef!

  • @tinkershimmy Stupid autocorrect. Splash of half/half.

  • the combination of the two comments above made me crack up.

  • where do you buy those spoons? They look great!

  • "When we add flour, we make a..." and I thought "Hey, I know this one! We make a thicker sauce." and when Chef John said "rue", I was like: ... -.-

  • @RobertOM95 But you were still right! The purpose of the roux is to thicken the sauce (or gravy). Good deal!

  • You are so right, Chef John! The way your wife likes it or the wrong way! LOL My husband thinks you're a genius. =D

  • That would be AMAZING over rice! I will try it!

  • I, too, love the remark not to worry about the butter because ham is being added in. That was the good laugh I needed. I am SO going to make this soon! And yeah, I'm getting married soon, and even though my wife-to-be hates rosemary, she hasn't banned it from the kitchen, and has already agreed to 'pretty much' have the run of the kitchen. But, I'm sure I'll be doing a lot of surrendering to her, and mostly, that's OK....as long as the food is good....and other things :)

  • omg this looks amazing!! i am soo going to try this!!!

  • i want to litterally lick the screen

  • 'that's allot of butter, but its ok because.... were going to add ham to it'

    lolwut

  • im making this on wednesday night for my family and cant wait

  • ok ok....the wife always wins.....if we except that, life will be grand

  • This video is a god send. My bf loves shrimp and grits and I wanted to cook it for him but I had no recipe. Thank you Chef John

  • I knew I should have waited until morning to watch this, now I'm absolutely STARVING! This looks wonderful, and you KNOW what I'll be making tomorrow night.

  • Thats not to much butter because theirs ham going in it....come on!..........This is why im fat!

  • Boy, i need to start using more hammy butter!

  • you're the funniest person ever.

  • why flour?

  • @Ferkat90 It's the rue, which helps to thicken sauce

  • I'd do it over mashers!

  • I love it! I would omit the ham and use SCALLOPS, CALAMARI, CRABMEAT AND SHRIMPS

  • mmm... hammy butter ^______^

  • No rice bro, not nice bro.

  • You are the man, Chef John!! *bows*

  • always a pleasure to listen to your great explanation and wonderful videos :)

  • "There's two ways to do things; The way your wife likes them, and the wrong way"

Wisest words i've heard all year.

  • Cajun seasoning = Tony Chachere's Seasoning

Around here we just say, "It coulda used a little Tony's." :)

  • The ONLY problem I have with following your recipes, chef John, is that the shop where I live HAS NONE OF THESE YUMMYNESSES.

Well, there are almost no good meats of seafoods. So raw shrimps = no.

  • ooooh god i love your voice

  • i showed this to my husband.. thanks for the wise words Chef John

  • wow i could eat that as a soup

  • can i use beef instead of ham?

  • @aboubrad why not ?

  • is there any substitute for the ham? other than pork?

  • Chef John never cease to amaze me.

  • delicioussssssssssssssssssssss

  • chef john... please post vegetarian recipes for all your veggie viewers!

  • thats so gay dodoinurpants anyways

  • happy wife = happy life. had to learn that REAL quick

  • Had a Dora moment when he asked what adding flour makes. Couldn't help but yell, "ROUX!!!!"

  • GRITS AND GRAVY MMMMMMMMMMMMMMMM

  • "and yes, that is a lot of butter but that's okay because we're going to add diced ham to it."

    uhh.. what?

  • @lidoj0njon that's my favourite line EVER. i'm going to use it as my excuse from now on. :-D

  • i'm drooling .___.

  • I belief the rice version of this is called an Etouffee. I only know this because I am a popeyes super fan and immediately got flashbacks when I saw this video

  • I love you Chef John...ur AWESOME

Ur wife is probably the luckiest woman ever...I'm so jealous...

  • way cant we buy cook shrimps

  • What's Grits? (I'm English we don't have this in the UK)

  • @annaTianna im from the US and i have no idea what grits are either.

  • I would love to see you make macarons.

I want to make them myself but I need to have my hand held during the process

  • omg... i can imagine this with some kind of pasta... that whould be amazing too

  • I love diced ham. If its ever used for a recipe, I end up eating half of it before it goes in the pan! xD

  • OMG Best description ever ~ Hammy butter!!!

  • Mmmm Looks so good. Might have to make this this weekend.

I couldn't agree more with the 'theres 2 ways of doing something. the way your wife likes it and the wrong way.' ;) wiser words have never been spoken from a man.

  • Out of the park with this one...Looks great!!

  • I thought the holy trinity was celery, onions and carrots? What blasphemy is this?

  • @Chantzehao Onion, celery and carrot is mirepoix.

  • only way to make butter better... add meat. GENIUS!

  • I wish I was gay so I can marry you.

  • @dodoinurpants Why can't you just marry him now? You can just make him cook and clean without ever fearing his power to withold sex :P

  • Is there a way I can substitute the shrimp for something else? My husband is allergic to shrimp.

  • At 4:00 <- Guys out there, Chef John knows best! Remember! Chef John knows best.

  • thumbs up for hammy butter

  • I can't tell you how many recipes I have to adjust for my husband's tastes. If I don't, I get, "What did you do different.?" Which is a nice way of saying, "You just spent 4 hours in the kitchen so I can eat a sandwich behind your back in a little bit while you're walking the dogs..."

  • That looks AMAZING! I will try this but with rice and not so much onions... onions and I do NOT get along! We fight all the time and they win :(

  • at the end he shouldve said "there are two ways, your wife's way and the right way"

  • Instead of shrimp can I use scallops? I'm super allergic to anything crustaceans and fish are disgusting.

  • @loldotalol379 i was thinking the same thing

  • your wife is A VERY LUCKY WOMAN
