  • I tried to make this cheesecake and it came out amazing - flavor wise. But the darn thing didn't set, cos I didn't add any of the coconut oil into the cashew filling cos I didnt know how much?! I also used only 1/2 a cup of lemon juice, otherwise it's too tangy and soy milk and regular sugar (1/2c) cos I couldn't find almond milk or agave where I live :( Her website is no help either, no recipes on there?? I would suggest my recipe if you cant find stuff and maybe some vege gum to set the cashew

  • Thanks Holly, the texture looks just like cheese cake, that is brilliant. I have some friends who are gonna be so happy about this recipe! I just recently discovered "miel de agave", I think it's from the agave plant? the bottle I have is all in spanish as this product is made in Mexico, wonder if you have an english version of it, anyway it taste really great! You rock in so many talented ways! Thanks for inspiring us!!!:0)

  • Looks SO yummy but I can't eat cashews!! :( I tried my own version of a mango-ginger vegan tofu cheesecake a few months ago but it had too many processed ingredients and it definitely wasns't raw. How cool, I wish I could try it...

  • oh dear! try using a mix of other nuts... pecans and walnuts can be lovely. I wonder what would happen if you mixed almonds, walnuts, and peanuts?

  • Thank you for the recipe - I hope your site has the last few steps! This will be my first vegan/raw - well, anything. Your patience with those two is inspiring (seriously, they look and act like sketch comedy characters).
