I tried to make this cheesecake and it came out amazing - flavor wise. But the darn thing didn't set, cos I didn't add any of the coconut oil into the cashew filling cos I didnt know how much?! I also used only 1/2 a cup of lemon juice, otherwise it's too tangy and soy milk and regular sugar (1/2c) cos I couldn't find almond milk or agave where I live :( Her website is no help either, no recipes on there?? I would suggest my recipe if you cant find stuff and maybe some vege gum to set the cashew

I just recently discovered "miel de agave", I think it's from the agave plant? the bottle I have is all in spanish as this product is made in Mexico, wonder if you have an english version of it, anyway it taste really great! oh dear! try using a mix of other nuts... pecans and walnuts can be lovely. I wonder what would happen if you mixed almonds, walnuts, and peanuts?
