    My good Finishing olive oil is in a glass bottle, I do not use that to fry foods.

    I use  a cheap olive oil for frying.

    I do like extra virgin olive oil, but not for pan frying as I think it is a waste of money.

    Extra virgin, to me, is only a topping, especially a topping on finished Italian foods and green tossed salads.

    Sorry that you do not like extra virgin... to each their own :)

    Well I don't know what the song is.

    I have Apple computers and they come with songs just like Windows comes with pictures.

    I do not use the music anymore, but did for a LONG time, YouTube does not like me using that song anymore... so I quit using it because of copyright issues.

  • can i skip the pad of butter that goes into the oil? it kinda freaks me out...lol because i avoid using oil or butter in my foods. however im making an exception for this dish because it looks amazing.

    frying Parmiggiano Reggiano is not a great idea..

  • @pollicemodena sorry but you're wrong, frying the cheese for the correct amount of time makes it wonderfully tasty and adds a slight crisp to the chicken. it's quite delicious and absolutely does not burn if you don't overdo it.

    Yes, you can take the final dish and put a slice of mozzarella on the top and slide it under the broiler quickly!

    You could also put some tomato sauce and then the mozzarella and put under the broiler.

  • @LetzEat usually it would have mozzarella cheese, tomato sauce (marinara) and a basil topping, but the calories start to pile on if you keep adding and adding..!

  • The potatoes are a great compliment. I never thought of making it without the marinara, but I think it would have better flavor without it. The marinara seems to overwhelm the parm and chicken taste I think. Nice recipe! :)

  • i noted they were fiestaware. i have only a few pieces (and they are of the new line) and i love them so. the colors are great!

  • Yummy!!! The only step I do differently is soak the chicken in milk after sprinkling the chicken with kosher salt. But the mash potatoes and peas look so delish with the chicken.
