can i skip the pad of butter that goes into the oil? it kinda freaks me out...lol because i avoid using oil or butter in my foods. however im making an exception for this dish because it looks amazing.

@pollicemodena sorry but you're wrong, frying the cheese for the correct amount of time makes it wonderfully tasty and adds a slight crisp to the chicken. it's quite delicious and absolutely does not burn if you don't overdo it.

The potatoes are a great compliment. I never thought of making it without the marinara, but I think it would have better flavor without it. The marinara seems to overwhelm the parm and chicken taste I think. Nice recipe! :)

My good Finishing olive oil is in a glass bottle, I do not use that to fry foods.
I use a cheap olive oil for frying.

I do like extra virgin olive oil, but not for pan frying as I think it is a waste of money.
Extra virgin, to me, is only a topping, especially a topping on finished Italian foods and green tossed salads.

Yes, you can take the final dish and put a slice of mozzarella on the top and slide it under the broiler quickly!
You could also put some tomato sauce and then the mozzarella and put under the broiler.
