@irfand4 - I would suggest that you buy tamarind or tamarind paste - it has a totally different taste and the sourness from this is very different. But for the time being put in a lot of lime juice. The idea is to get that sour taste.

I use frozen vegetables most of the time. Usually one month should be good for most vegetables including Baigun. However, I have used frozen tomatoes for almost six months. I grow tomatoes in the season and freeze those. Worked out pretty well for most dishes.
n then mislead others this in no way can be called bharta yes u guys r right baingan need 2 b roasted n peeled. all i can say is stop messing wid traditional foods if u dont know how to make it ..food need time n lov not like this crap lol i feel sorry 4 ur family if this is wot u feed them

You can check it out online. Or go to any major store that carries home products. Not sure where you live. In US any Macy's store or bed bath and beyond should carry one.
That pressure cooker is Hawkins brand. Please go in to near by indian store and you will find one. They are very sturdy. If you the store do not have one, they might carry 'Prestige' which is also famous and sturdy. Good luck
have you tried roasting an eggplant on direct flame and then skinning it? then mash it and add it to a mixture of fried onions garlic, tomatoes and other spices and cook it for a while. the smoking gives it a nice flavor. Try not to cook in pressure cooker. :-)
The eggplant used in the video was frozen. There was no salt on the eggplant. I usually wash and cut my vegetables and freeze them. As I use a pressure cooker most of the time I do not thaw the vegetables and simply put in the frozen cut vegetables. You will notice the same thing with tomatoes that I use in some of my videos.
I am surprised, baingan ka bertha will have rich aroma when u burn brinjals on burning charcoal and then make a paste out of it using friend onions,chillies.Otherwise its not baingan ka bertha,,,apologies if i have offended you but you are simply great have watched all ur dishes mam.

should not be called baingon bharta, its not roasted = no smokey flavour - this is just ordinary baingon tamatar ki sabzi

Cook in a coverd pot. It will take longer., and you will have to watch the pot so stir often. The taste should be the same.
