I'm not sure how the respiration rate changes as trees age. However, this video is talking about the fact that trees' structures (especially old trees) contain huge amounts of carbon. When you burn a tree, the carbon that was previously forming the tree is released into the air (as a greenhouse gas). So the burning of trees is a double-whammy - you lose their ability to breathe in CO2 and out oxygen, and you also release the huge amount of carbon in their structures into the air.
