This is why you fill the pot with water first, then put the turkey in, pour out the water till it is just covering the turkey, and then remove the turkey, measure the water level, and add that much oil AND NOT A DROP MORE.

I use a ladder, pulleys and a rope to lower the turkey in from about 8ft away. I also measure with water how much oil to put in first. Hot oil, open flame and possible spillage means I don't want to be anywhere near that bird as it's going in

The good idea would have been to put the turkey in first before lighting the burner then Add water to the pot until it covers the bird then take the turkey out to see how much oil you would need mark the fill line with marker. In frying turkeys there should be no guessing. measure first! Oil takes a very long time to cool down. So your idea wouldn't have worked. The problem they had was too much oil!
